B R O C C O L I S O U P:
⢠Ingredients:
š„¦ 500g broccoli
š„¬ 1 bunch spring onion
š¶ 1 Liter veggie stock
š« some olive oil
š„„ 1 dollop light sour cream or coconut yogurt
š§ some Parmesan
⢠Methods:
š± Wash the broccoli and spring onions and cut in small rings and florets
š± Heat the olive oil in a big pot and add in the veggies
š± Pour over the stock and let it simmer for about 10 minutes
š± Take the pot off the heat and blend the soup up
š±Reheat the blended soup and season it with salt, pepper and a pinch of sugar
š± Serve it with some sour cream and Parmesan cheese and some sourdough on the side
