INCREASE YOUR DAILY VEG - BROCCOLI SOUP RECIPE

Here’s a solution for you - easy & quick

B R O C C O L I S O U P:


• Ingredients:

🄦 500g broccoli

🄬 1 bunch spring onion

šŸ¶ 1 Liter veggie stock

šŸ«’ some olive oil

🄄 1 dollop light sour cream or coconut yogurt

šŸ§€ some Parmesan


• Methods:

🌱 Wash the broccoli and spring onions and cut in small rings and florets

🌱 Heat the olive oil in a big pot and add in the veggies

🌱 Pour over the stock and let it simmer for about 10 minutes

🌱 Take the pot off the heat and blend the soup up

🌱Reheat the blended soup and season it with salt, pepper and a pinch of sugar

🌱 Serve it with some sour cream and Parmesan cheese and some sourdough on the side
